Nurtured for sixteen years, this is the whisky of choice for the people of Jura. Tor honour this special relationship, the symbol of the Diurachs’ adorns each and every bottle. The rich and full bodied whisky in the Jura family. This is the favourite dram of the Diurachs’ - or people of Jura - they hate to see it leave! The symbol on the bottle is for the Diurachs’. A combination of aged whiskies, sixteen years and older, aged in Bourbon casks and finished for a minimum of 2 years in Amoroso Oloroso sherry combine to give a rich and full bodied whisky. Aromas of butterscotch and candied orange peel and followed by flavours of cinnamon spice, ripe apricot and toffee popcorn.

The water of Jura has long been believed to possess mystical qualities, owing to a legendary blessing by St Columba nearly 1,500 years ago. The islanders certainly have a history of longevity - legends tell of a man who lived to see 180 Christmases in his own home. Myth or fact, Diurachs’ can certainly control the ageing process when it comes to whisky. A legend based on the water found on Jura, where the water’s said to have life giving properties. Aged in a mix of American White Oak and Sherry casks, the combination of flavours includes crushed almonds, pineapple and fresh roasted coffee. The palate is rewarded with hints of citrus fruit, dark toffee and ginger spice. An exceptionally easy drinking whisky that is smooth and warming.

This is where it all started. For us, this whisky signifies the rebirth of the Jura distillery and rebuilding of our community. So it’s fitting that each bottle carries the ancient Celtic symbol for beginnings. The light and delicate malt that begins the Jura flavour journey. A great malt for those new to single malt whisky. The tall stills on Jura give a new make spirit which is light and floral. Origin is the core example of this character that runs through the Jura family. A balanced maturation of 50/50 first and second fill ex-Bourbon casks gives the whisky elegant and subtle flavours of oak, vanilla, honey & toffee.

Some taste peat smoke, fresh cinnamon and spicy sea spray, but like any great story, it's all open to interpretation.Meticulously crafted from a selection of the finest andrarest aged Jura single malt whiskies, Prophecy is aprofoundly peated spirit. Peat smoke, fresh cinnamonand spicy sea spray lead the first assault. Finally the tarrybonfire notes slowly give way to hints of soft liquoriceand nutmeg. It’s a mixture of casks with different peat levels and peat styles, finished off by a 1989 oloroso sherry butt from Gonzalez Byass. It’s non-chill-filtered but coloured with caramel.

JURA AGED 21 YEARS - RareDESCRIPTION
Although our distillery was reborn in 1963, it has stood in the same spot since first opening in 1810. So for our 200th anniversary, we decided to celebrate with a 21-year-old whisky matured in Oloroso sherry casks, just like they did back in the day. The result was so good, we’re still celebrating. The Jura 21 year old is a superb example of what the distillery is capable of when this spirit is left to mature in the warehouses behind the distillery. This whisky is rich and full bodied thanks to a final maturation in a 1963 Oloroso Sherry butt. Aromas of Jaffa cakes, honey on porridge and citrus fruits and followed by flavours of mashed neeps (turnips!), blood orange, winter spices and soft liquorice.

Fully matured in ex-Bourbon casks then finished in vintage 1963 Oloroso sherry casks - the same year in which the distillery on Jura re-established itself at the heart of the island.
Lightly peated - that’s nicely smoky to you
Islanders were a superstitious lot in the past. As a nod to them, and to our island home, still dotted with ancient stones and markings, we called this expression Superstition. When you raise a glass of this whisky, you’re raising a glass to the ancient ways of our island. Superstition is the lightly peated malt in the Jura range. The cross on the bottle is an Ankh Cross, an Egyptian symbol for good fortune. Pour the whisky with the cross in the palm of the hand to pass out that good fortune! At Jura, they distil 2 types of new make spirit - peated and unpeated. A mixture of 7 year old heavily peated and 13 year old unpeated Bourbon matured whiskies combine to create a flavourful yet balanced lightly peated malt. A rounded mouth feel is created using a small amount of 21 year old whisky. White pepper and blackforest honey mix with ashy smoke on the nose. The palate is well balanced with hints of buttered popcorn, sticky toffee apples rolled in spice and sweet smoke.

Andrew Mackenzie’s Masterpiece
THE DALMORE AGED 12 YEARSDESCRIPTION
The Dalmore 12 year old, with its intricate aromas and flavours, is recognised as a whisky with character far beyond its age. This was Andrew Mackenzie’s original masterpiece and stood apart from the norm of the day. At a time when it was standard practise to mature whisky for no more than 6 years. Andrew Mackenzie demonstrated his pioneering character by doubling the maturation period. His boldness truly paid off. The Dalmore 12 year old still stands apart as an exceptional whisky today, as it did then. Matured for an initial nine years in American white oak ex-bourbon casks, the spirit is then divided for its final flourish. One half remains in the bourbon barrels, while the other istransferred to exclusive 30 year old Gonzalez Byass Matusalem oloroso sherry butts before they are reunited to create this phenomenal whisky. The beginning of the journey into The Dalmore distillery style. You are unlikely to find a whisky of this age that has as much complexity and finesse. There are 2 reasons for this; 1 is the older whisky that is added to the younger expressions to give depth, and 2 is the specially selected 30 year old Matusalem sherry casks that help give The Dalmore its rich style. The 12 year old is matured initially in ex Bourbon casks for 9 years, 50% of the liquid is then carefully transferred into the Matusalem sherry butts for 2 years maturation, before being reunited with the bourbon casks for a final year of maturation. Aromas of orange marmalade and five spice with flavours of liquorice, Colombian coffee and sticky toffee.

The Dalmore House Style Is Born
THE DALMORE AGED 15 YEARSDESCRIPTION
The Dalmore 15 year old is smooth, rich and well rounded; the epitome of The Dalmore house style. This delicate and approachable vintage is initially matured for 12 years in American white oak ex-bourbon casks. The character of The Dalmore 15 is achieved by then splitting the whisky equally between three different sherry woods; Amoroso, Apostoles and Matusalem oloroso for a further three years. This spirit is finally married together in an upstanding sherry butt, allowing the flavours to infuse. A wonderfully smooth single malt that is often favoured by those who are new to whisky. This fine dram is aged in bourbon for 12 years before being finished in 3 different sherry casks (Matusalem/Apostoles/Amoroso) for 3 years that all bring different flavours to the whisky. These casks are then married and left for a final 6 months to allow the flavours to marry and harmonise. Notes of bitter sweet chocolate orange, peach and apricot are accompanied by orange zest and spicy flavours of cinnamon and ginger.

THE DALMORE AGED 18 YEARSDESCRIPTION
An evolution of The Dalmore house style, this 18 year old expression harnesses bolder notes. A robust and formidable whisky. The Dalmore 18 year old showcases the result of extended maturation and the influence of the wood. Matured initially for 14 years in American white oak ex-bourbon casks, the spirit is then transferred to 30 year old Matusalem oloroso sherry butts for a further four years. These sherry butts from the world-renowned sherry house Gonzalez Byass are selected exclusively for The Dalmore. A more masculine offering from The Dalmore that makes the perfect after dinner dram. Matured initially for 14 years in ex-bourbon casks before being transferred to a Matusalem oloroso sherry butt for 4 full years, it’s a rich and full flavoured dram with flavours of chocolate covered raisins, black coffee and darker notes of tobacco leaf and cigar smoke. All brightened u with a fresh pink grapefruit finish. This would be the perfect partner to a lab of good quality dark chocolate!
